Whoopie Pies

Making Whoopie Pies with mom was such a treat. First we'd bake the cookies, then carefully search through the finished product, pairing up the ones that were mirror images of each other so the final "sandwich" would look as uniform as possible. Next, we would whip up the gooey filling, frost one cookie half and place the other on top, then wrap each cookie individually in plastic wrap and pile them up in a big bowl. They didn't last long, especially when the neighborhood kids found out we had just made a fresh batch!

1/2 cup vegetable shortening (or substitute butter)
1 cup sugar
1 egg
1 cup milk
1 tsp. vanilla
1/2 cup cocoa
2 cups flour
1/3 tsp. salt
1 1/2 tsp. baking soda
1/2 tsp. baking powder

Cream shortening with sugar. Add vanilla, egg and milk. Sift cocoa, flour, salt, baking soda and baking powder and add to creamed mixture. Drop by spoonful on a cookie sheet lined with foil. Bake at 350 degrees F. for 12-14 minutes. Cool on wire racks. Make filling.

Filling
Note: if you like a lot of filling, double the recipe.

1/2 cup vegetable shortening
1 cup confectioners sugar
1 cup Marshmallow Fluff
1 tsp. vanilla

Whip shortening with sugar until smooth. Blend in fluff and vanilla.

Go through the baked cookies searching for similar shapes and pair them up. Spread filling onto the flat side of one cookie, then place second cookie on top, making a sandwich. Wrap in plastic wrap.

Makes about 14 filled whoopie pies.
