Raisin Bread

This is really a variation of a soda bread, but it's made with baking powder. Although it's tasty warm from the oven and slathered with butter, this really makes the absolute best toast the next day...if it lasts that long!

3 1/2 cups flour
4 1/2 tsp. baking powder
1/2 cup sugar
1 tsp. salt
1 egg
1 tablespoon butter, melted
1 1/2 cups milk
1 cup chopped raisins

Sift the flour, baking powder, sugar and salt together in a large bowl. Add the milk, egg and butter and beat well. Stir in the raisins.

Scrape dough into a greased 9-inch pie plate. Let dough rest 20 minutes before baking. Preheat oven to 350 degrees F. Bake the bread for 45-55 minutes until golden brown. Bread should sound hollow when tapped. Remove to wire rack to cool.
