Lemon Bundt Cake

This is a great cake to bring along to a picnic or pot luck party. It has a strong lemon flavor and a light lemon glaze. It's sure to please everyone.

1 cup butter
1 1/2 cups granulated sugar
1/2 cup fresh lemon juice
Grated rind of one lemon
5 eggs
3 1/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
2/3 cup buttermilk

Preheat oven to 350 degrees F. Grease and flour a Bundt pan.

In large bowl combine butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in lemon juice and rind.

Sift together flour, baking powder and salt. Add dry ingredients to creamed mixture alternately with buttermilk. Turn batter into prepared pan. Bake at 350 for 45-55 minutes or until cake tester comes out clean. Cool in pan for 5 minutes, then turn out onto a rack to cool completely.

Glaze
Blend one cup of powdered sugar with 2 tablespoons lemon juice until smooth. Drizzle glaze over cooled cake.
