candycane.gif - 2969 Bytes Candy Cane Cookies

These are a special holiday treat. You can also string them and hang them from the tree...don't expect them to last until Christmas!

1/2 cup butter
1/2 cup vegetable shortening
1 cup powdered sugar
1 egg
1 teaspoon almond extract
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon salt
1/2 teaspoon red food coloring
1/2 cup crushed peppermint candy canes
1/2 cup sugar

Pre-heat oven to 375 degrees F. Mix butter, shortening, powdered sugar, egg, almond extract and vanilla, blending well. Mix in flour and salt until well combined. Divide dough in half. Add red food coloring to one half of the dough.

Shape about 2 teaspoons of dough from each half into a 4-inch long rope by rolling back and forth on a lightly floured surface. Place both ropes together side by side pressing slightly, then twist together. Place on greased cookie sheet and curve the top to form the cane. Repeat with remaining dough.

Bake 9-11 minutes or until set and very lightly browned. Combine peppermint candy and sugar. Immediately sprinkle cookies with candy/sugar mixture, then remove from baking sheet to cool on a rack.

Makes 3 1/2 to 4 dozen cookie canes.
