Chocolate Lady Fingers

1 ½ cups white flour
2 eggs, separated
1 cup sugar
3 tablespoons milk
3 tablespoons water
½ teaspoon vanilla
3 tablespoons cocoa
3 teaspoons baking powder
¼ teaspoon salt

Beat egg yolks with electric mixer until thick and lemon colored. Add the sugar and continue beating until light and thick. Add vanilla, salt and water.

Sift flour, cocoa and baking powder together and add alternately with the milk to the egg yoik mixture. Beat the egg whites until stiff and fold into the batter.

Bake the batter in oiled lady finger tins if available. Otherwise, form dough onto oiled cookie sheet into lady finger shape, or use a pastry bag to pipe out the dough. Bake at 375 degrees for about 10 minutes. Makes about 3 dozen.
