Buttermilk Donuts

3 1/4 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 tablespoons butter, softened
2 eggs
3/4 cup buttermilk
Vegetable oil for frying

In a deep frying pan or kettle, pour in enough vegetable oil so that it's 3 to 4 inches deep. Heat the oil to 375 degrees F. (Use a cooking thermometer to be accurate.)

In a large mixing bowl, measure 1 1/2 cups flour and the remaining ingredients. Beat well with electric mixer. Scrape down sides of bowl and add stir in the remaining flour.

Turn dough onto floured surface and roll to about a 1/2-inch thickness. Cut out with a donut cutter. If you don't have a donut cutter, use a drinking glass to cut out circles, then use a sharp knife to cut out a small hole in the center.

Slide donuts into hot oil a few at a time, don't over fill pan; turn donuts as they rise to the surface. Fry 2 - 3 minutes or until golden brown on both sides. Remove from oil and drain on paper towels. Serve plain or sprinkle with powdered sugar, or cinnamon sugar. Bring oil back to the 375 degree temperature before cooking next batch.

Makes about 2-dozen donuts, depending on size of donut cutter.
