Strawberry Streusel Muffins

2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 cup brown sugar
7 tablespoons butter, softened
1 egg
1/2 cup milk
1 1/2 cups strawberries diced
1 teaspoon grated lemon peel

Preheat oven to 375 degrees F. Combine flour, salt, baking powder and cinnamon, set aside. In large bowl cream butter with brown sugar. Add egg and milk, mixing well. It's ok if mixture is lumpy or curdled. Add dry ingredients and blend just until flour is moist. Fold in strawberries and lemon peel. Divide batter evenly among 12 muffin cups that have been sprayed with cooking spray. Sprinkle topping over muffins and bake for 20-22 minutes or until done.

Topping
1/2 cup pecans; chopped
1/2 cup brown sugar
1/4 cup flour
1 teaspoon cinnamon
1 teaspoon lemon peel
1 teaspoon fresh lemon juice
1 tablespoon butter

Combine topping ingredients together until well blended.
