Jalapeno Corn Muffins

1 1/2 cups yellow corn meal
1/2 cup flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 1/4 teaspoons salt
2 eggs, lightly beaten
1 cup sour cream
1 1/2 teaspoons minced, seeded fresh jalapeno pepper

Heat oven to 350 degrees F. Grease 12 muffin cups, or use paper liners. Combine corn meal, flour, sugar, baking powder, and salt in a large bowl. Beat eggs and sour cream with a whisk or fork in a small bowl, stir in jalapeno pepper. Pour wet ingredients over flour mixture. Stir until all ingredients are combined but do not over mix.

Fill muffin cups and ba 20 to 25 minutes, or until firm to the touch. Let cool 5 minutes in pan before turning out onto a cooling rack.
