Poppy Seed Cookies

1 cup butter
1 cup sugar
2 tsp. vanilla
2 hard-cooked egg yolks, sieved
2 raw egg yolks
2 cups flour
1/2 tsp. salt
1 egg white
Poppy seeds

Beat butter, sugar and vanilla until creamy. Add sieved egg yolks and raw egg yolks to sugar and mix well. Add sifted flour and salt gradually. Chill dough. Roll out small portions to 1/4" thickness on floured board. Cut in 1 1/2-2" rounds. Place on greased baking sheet. Brush with 1 egg white beaten with 1 tbsp water. Sprinkle with poppy seeds. Bake at 350 degrees for 10-12 minutes or until delicately browned. Makes about 3 dozen.
