Oatmeal Raisin Nut Cookies
Yield: 4 dozen cookies

1 cup of butter
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 cups quick cooking oats
1 cup raisins
1 cup chopped walnuts or pecans

Cream butter and sugar in large mixing bowl. Add eggs and vanilla and mix well. Add dry ingredients, oats, raisins and nuts and beat until combined.

Drop by heaping teaspoon onto ungreased cookie sheets and bake at 350 for 12-15 minutes. Remove immediately from cookie sheets to cooling rack.
