Fig Newtons

Dough
1 cup sugar
1/2 cup shortening
1 egg
1/2 cup milk
1 tsp. vanilla
3 cups flour
4 tsp. cream of tartar
2 tsp. baking soda
1/2 tsp. salt

Fig Filling
1 1/2 tbsp. flour
1/2 cup sugar
1/2 cup water
1 cup ground dry fig

Combine filling ingredients until well blended and set aside.

Cream together sugar and shortening until light and fluffy. Stir in egg, milk and vanilla and beat until smooth. Sift together flour, cream of tartar, baking soda and salt. Add to creamed mixture and stir until dough is stiff. Add more flour if needed to make a stiff dough. Roll out on a floured board to a 1/4 inch thickness. Cut into rectangles about 1 1/2 x 2 inches. Place a spoonful of fig filling on one side of dough. Fold over and seal edges. Bake at 350 degrees for 10 to 13 minutes. Makes about 40 fig newtons.
