Fig Cookies

1 cup dried figs
3/4 cup sugar
1/2 cup butter
1/2 cup honey
2 eggs
2 Tbsp. milk
1 tsp. orange extract
2 3/4 cups flour
3 tsp. baking powder
1/2 tsp. salt
Grated rind of one orange
1/2 cup flaked sweetened coconut

Preheat oven to 375 degrees F.

Wash figs, place in a saucepan and cover with cold water. Bring figs to a boil then lower heat and simmer 10 minutes. Drain, cool and chop. Cream sugar and butter together until fluffy. Add honey, eggs, milk and orange extract. Mix thoroughly. Sift flour, baking powder and salt. Add to sugar and shortening mixture. Add graded orange rind and coconut and mix well.

Drop by teaspoonful onto greased cookie sheet. Bake 12-15 minutes or until browned. Makes about 3 dozen cookies.
