Eggless Banana Cookies

1 cup butter
2 cups sugar
1 tsp. vanilla
1 cup mashed fully ripe bananas
3 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt

In large mixer bowl cream butter, sugar and vanilla. Add mashed bananas and blend well. Sift together flour, baking powder and salt. Add flour mixture to banana mixture, mixing well, dough will be sticky. Divide dough into 4 parts. Dampen hands with water and form each dough section into a log about 1-inch in diameter. Place on sheet of wax paper and wrap up. Repeat with remaining dough. Place dough in refrigerator until firm enough to slice. You can also freeze rolls of dough.

When ready to bake, preheat oven to 375 degrees F. Slice dough into 1/2-inch thick rounds. Placed rounds on parchment lined cookie sheets (or oil sheets if you don't have parchment paper.) Bake about 10 minutes or just until edges begin to brown.

Remove to wire rack to cool. Makes about 8 dozen cookies.
