Apricot Oatmeal Cookies

3/4 cup firmly packed brown sugar
1/2 cup butter, softened
1 tsp. vanilla
1 egg
3/4 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup quick-cooking rolled oats
1/3 cup coconut
1/2 cup chopped walnuts
1/2 cup dried apricots, chopped
1 cup corn flakes cereal

Heat oven to 350 degrees. Grease cookie sheets. In a large bowl, beat brown sugar and butter until light and fluffy. Add vanilla and egg; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour, baking soda, salt, rolled oats, coconut, wheat germ and apricots; mix well. Stir in corn flakes gently. Drop by teaspoonfuls 2 inches apart onto greased cookie sheets.

Bake at 350 degrees for 8 to 10 minutes or until light golden brown. Cool 1 minute and remove from sheets. Makes 3 dozen cookies.
