Old Fashioned Cupcakes
1/2 cup butter, softened
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
Preheat oven to 350 degrees. Line cupcake tins with paper or foil liners. Cream together the butter & sugar. Add the eggs one at a time and beat well. Add the vanilla extract. Sift together all the dry ingredients & add to the mixture, 1/3 at a time, alternating with the milk. Pour into the prepared cupcake tins until each is 2/3 full and bake 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Makes 12 cupcakes.
Frosting
1/2 cup butter, softened.
3 1/2 cups confectioner's sugar
3 Tbsp. milk.
1 tsp vanilla
Cream the butter until it's light in colour, then alternate adding the confectioner's sugar & the milk, beating on medium-high until fluffy. Add the vanilla and mix well. Yield: 2 cups.
