Whole Wheat Waffles
1 cup whole wheat flour
1/4 cup wheat germ
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 cups buttermilk
2 Tbsp. vegetable oil
1/2 tsp. vanilla extract
1 egg, beaten
Combine dry ingredients in a medium-size bowl. In a small bowl, mix buttermilk, oil, vanilla and egg. Add wet ingredients to dry ingredients to form a smooth batter.
Heat waffle iron and brush lightly with oil. Pour in enough batter to just fill. Close and cook until steam stops escaping. Waffles should be browned.
Serve with butter and syrup or with fresh fruit and yogurt.
