Strawberry Cheese Stuffed French Toast
8 thick slices (2-inches) French bread
1/2 cup strawberry preserves
4 ounces cream cheese
6 eggs
1/3 cup milk
1 tsp vanilla
1/2 tsp cinnamon
On the bottom edge of each piece of bread, slice a pocket, leaving a 1/2 inch border on 3 sides. Mix preserves with cream cheese and fill the bread pockets with the cheese mixture. Beat the eggs, milk, vanilla and cinnamon together.
Soak each piece of bread in the egg mixture, coating all sides. Place in hot buttered skillet or griddle. Cook until brown on both sides, turning once.
Serve with powdered sugar or maple syrup.
