Sourdough Pancake

Starter
2 cups flour
2 cups water
1 package yeast

Mix in clean (sterilized) glass or crockery bowl. Allow to ferment two to three days. Feed with flour and water to keep going, or freeze in plastic container. Thaw out and feed to resume use.

Pancakes

1 cup sourdough starter
1 cup unbleached flour
1 egg
2 Tbsp. butter, melted
1 cup milk, warmed
1 tsp. salt
1 tsp. baking soda
3 Tbsp. sugar

Mix sourdough starter, flour, egg, butter and milk. Blend in salt, soda, and sugar. Let mixture bubble and foam a minute or so, then pour onto lightly greased griddle or skillet. Turn once, browning both sides.

Serve with butter and maple syrup. Serves: 8
