Baked Peach Pancake
3/4 cup flour
1/4 tsp. salt
3/4 cup cream or milk
3 Tbsp. sugar
3 eggs
4 peaches, peeled, cored and sliced
1/4 cup brown sugar
1 tsp. cinnamon
Preheat oven to 400 degrees F. In a large bowl, whisk together flour, salt, cream, sugar and eggs. Heat a large 10-inch oven-proof skillet to medium-high heat. Use cooking spray or brush with butter. Pour batter into hot skillet and cook just until set and lightly browned on the bottom.
Remove from heat and arrange peaches on top. Sprinkle brown sugar over peaches, then sprinkle top with cinnamon. Bake for 10 to 15 minutes or until golden brown on top and cooked through. Serve warm.
