Crisp Waffles

2 cups cake flour
4 tsp. baking powder
1/2 tsp. salt
3 eggs, separated
1 3/4 cups evaporated milk
1/2 tsp. vanilla
1/2 cup vegetable oil

Combine cake flour, baking powder and salt. In another bowl beat egg yooks, evaporated milk, vanilla and oil. Add wet ingredients to dry ingredients and mix well. Beat egg whites until stiff and fold into batter until no white streaks remain.

Bake in hot waffle iron until no more steam escapes and waffles are brown and crisp.

Serve with butter and maple syrup.
