Buckwheat Griddlecakes
1 1/2 cups buckwheat flour
1 1/2 cups white flour
2 1/2 tsp. baking powder
1/4 cup sugar
1 tsp. salt
1/4 cup butter, melted
3 cups milk
2 eggs, lightly beaten
Sift together the dry ingredients and set aside. Mix melted butter, milk and eggs together. Combine wet and dry ingredients and mix just until all ingredients are well combined. Pour onto hot, greased griddle and cook until bubbles form, then turn and cook other side.
