Baked French Toast
Prepare the night before for a quick breakfast treat.

8 thick slices French bread
3 eggs
1 tablespoon flour
1 tablespoon sugar
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup milk
3 tablespoons butter, melted

In a mixing bowl, lightly beat eggs. Add flour, sugar, cinnamon, baking powder, salt and vanilla, mixing until smooth. Beat in milk. Place bread in a 13x9-inch baking dish and pour egg mixture over. Cover and refrigerate overnight.

Butter another 13x9-inch baking pan using 1 tablespoon of the melted butter. Arange bread slices in buttered pan. Pour any additional egg mixture left in original pan over bread. Drizzle remaining butter over the top.

Bake at 450 degrees F. for 8-10 minutes. Turn slices and bake and additional 5 minutes. Serve with maple syrup, fresh fruit and yogurt, or cinnamon sugar. In a second 9 x 13-inch baking pan, pour half the butter. Arrange bread in pan. Drizzle with remaining butter.
