Rhubarb Bread
1 1/2 cups brown sugar, packed
2/3 cup oil
1 egg
1 cup buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 1/2 cups flour
1 1/2 cups rhubarb, diced
1/2 cup nuts, chopped
White sugar
Stir ingredients together in order given. Pour into 2 well greased and floured 8-inch loaf pans. Sprinkle tops with sugar.
Bake at 325 degrees for 50 minutes or until cake tester comes out clean.
