Pineapple Macadamia Bread

1 cup white sugar
4 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
3/4 cup pineapple juice
1/2 cup crushed canned pineapple
1 tablespoon baking powder
3 cups all-purpose flour
1/2 teaspoon salt
1 cup chopped macadamia nuts

Preheat oven to 350º F. Lightly grease and flour a 9 x 5-inch loaf pan.

In a large bowl, combine sugar, eggs, vegetable oil, vanilla, pineapple juice and pineapple; mix well. In a separate bowl, sift together baking powder, flour and salt. Stir flour mixture into pineapple mixture. Fold in macadamia nuts. Pour batter into prepared pan.

Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into center of loaf comes out clean.
