Farmer's White Bread

2 tablespoons dry yeast
2 cups warm water
1/2 cup sugar
1 tablespoon salt
2 eggs, beaten
1/4 cup butter, melted
6 1/2 - 7 cups white flour

In a large mixing bowl dissolve yeast in warm water. add the sugar, salt, beaten eggs and melted butter. Beat in 3 cups of the flour until mixture is smooth. Stir in enough of the remaining flour to make a firm dough. On a floured surface knead the dough for 8 - 10 minutes until smooth and elastic.

Place dough into an oiled bowl, turning once to grease all sides, and let rise until double in volume. Divide dough into 3 pieces and form each into a round loaf. Place loaves on a greased cookie sheet. Let dough rise again until double in size.

Bake at 375 degrees F. for 25-30 minutes. Dough should sound hollow when tapped. Remove to rack to cool.
