Date Nut Bread
1 cup chopped pitted dates
1/4 cup butter
3/4 cup boiling water
1 1/2 cups all-purpose flour
1 1/2 tsp baking soda
1 tsp salt
2 eggs, lightly beaten
1 tsp vanilla extract
3/4 cup granulated sugar
3 tablespoons honey
3/4 cup chopped walnuts
In a large bowl combine dates, butter and boiling water. Lets stand 15 minutes.
Preheat oven to 350 degrees F. Combine flour, baking soda and salt, set aside. Add eggs, vanilla, sugar and honey to date mixture, mix well. Stir in nuts and flour until just combined.
Pour into a greased 9x5-inch loaf pan. Bake for 55 - 65 minutes.
