Cheddar Biscuits

2 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons butter, chilled
1 cup grated cheddar cheese
1 cup milk

Preheat oven to 425 degrees. In a large bowl blend the flour, baking powder, sugar and salt. Cut in the butter until mixture looks like coarse meal. Add the cheese and milk and stir just until dough holds together.

Turn the dough out onto a lightly floured surface and knead 7 to 8 times. Roll the dough to a 1/2 inch thickness. Using a 2-inch round cutter cut out as many biscuits as possible. Place biscuits on greased baking sheet. Rework the scraps of dough, rolling and cutting as above until all dough is used. Bake for 10-12 minutes until browned.

Makes about 16 biscuits.
