Anadama Bread
Yield: 1 loaf

3/4 cup boiling water
1/2 cup plus 1 tablespoon yellow cornmeal
1/4 cup butter
1/4 cup molasses
2 teaspoons salt
1/4 cup warm water
1 egg, beaten
1 package dry yeast
2 3/4 cup white flour

Stir boiling water, 1/2 cup cornmeal, butter molasses and salt together in a large bowl to combine. Let mixture cool to lukewarm.

Dissolve yeast in warm water. Add yeast mixture, beaten egg and half of the flour to the mixture. Beat 2-3 minutes until well combined. Add the rest of the flour, mixing with a spoon until well blended. Spread the batter into a greased 8 x 5 x 3-inch bread loaf pan (batter will be sticky.) Let bread rise in a warm place until batter reaches top of pan. Sprinkle remaining tablespoon cornmeal on top of dough. Bake in 375 degree oven for 50-55 minutes. Remove from pan and cool on rack.
