Sweet Potato Pie
1 - 9" single pie crust, unbaked
1 1/4 cups mashed cooked sweet potatoes
1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 eggs
1/2 cup sour cream
1/4 cup milk
3 tablespoons butter, melted
Heat oven to 400 degrees F. Stir sweet potatoes, brown sugar, salt, cinnamon and nutmeg in a large bowl until well blended. Whisk in eggs, sour cream, milk and butter. Spoon into pie shell.
Bake for 45 minutes or until the tip of a knife inserted in center of pie comes out clean. Cool on wire rack. Serve with whipped cream.
