Maple Walnut Muffins
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup chopped walnuts
1/4 cup maple syrup
1 egg lightly beaten
3/4 cup milk
1/4 cup melted butter
Preheat oven to 400 degrees F. and grease 12 muffin tins.
Sift flour, baking powder, sugar and salt into medium bowl. Stir in walnuts. Combine maple syrup, egg, milk and melted butter and add to dry ingredients. Stir just until all combined, lumps are ok.
Divide batter evenly among 12, greased muffin tins. Bake at 400 F. for about 18-20 minutes or until done. Muffins should be firm to the touch. Remove from oven and let pan rest 2-3 minutes then remove muffins to a wire rack to cool.
