Low Fat Banana Scones
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
2 medium bananas, mashed
1/4 cup brown sugar, packed
1 6-ounce container fat free plain yogurt
1 tablespoon skim milk
1 tablespoon coarse white sugar (or granulated sugar
Preheat oven to 375 degrees F. Line a large cookie sheet with parchment paper.
Combine dry ingredients in medium bowl and set aside. Combine mashed bananas, brown sugar and yogurt until well blended. Add banana mixture to dry ingredients and stir to combine, working dough gently. Do not over mix.
On a lightly floured surface, gently press dough into a 9-inch circle. Cut dough into 8 triangles and place on cookie sheet. Brush with skim milk and sprinkle with sugar.
Bake at 375 for 18-20 minutes or until golden brown. Let cool.
Makes 8 scones.
