Raspberry Squares
1 1/4 cups flour
1/2 cup butter
1/4 cup sugar
1 cup raspberry jam
2 eggs
1 cup sugar
2 cups shredded coconut
1 tsp. vanilla
1/2 tsp. baking powder
1 Tbsp. flour
Combine 1 1/4 cups flour, 1/2 cup butter and 1/4 cup sugar until crumbly. Press into a greased 9-inch square baking pan. Spoon jam over crust in pan.
Beat eggs until frothy. Add sugar, coconut, vanilla, baking powder and 1 T. flour. Mix well. Pour over jam layer. Bake at 350 for 40-45 minutes or until browned and filling set.
Cool before cutting into squares.
