Cornflake Cookies
2 tablespoons butter
1 cup sugar
1/4 teaspoon salt
1 teaspoon baking powder
3 eggs lightly beaten
1 teaspoon vanilla
5 cups cornflakes
Preheat oven to 400 degrees F.
Cream together the butter, sugar salt and baking powder. Add eggs and vanilla and mix well. Stir in cornflakes.
Drop batter by teaspoonfuls onto cookie sheet lined with parchment paper or greasted. Bake for 6 to 8 minutes or until lightly browned. Remove to a wire rack to cool.
Makes 5 - 6 dozen cookies.
