Buttermilk Cake
2 1/2 cups flour
1 cup granulated sugar
3/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups buttermilk
1/2 cup butter, softened
3 eggs
1 tablespoon vanilla
Icing:
1/2 cup softened butter
8 oz cream cheese
1 box confectioner's sugar
Preheat oven to 350 degrees F. Greese and flour a 13x9 baking pan. Place all ingredients into a large mixer and blend at low speed for one minute. Scrape down sides of bowl. Increase speed to high and beat for 2 to 3 minutes until well combined.
Pour into prepared pan and bake for 45 minutes or until toothpick inserted in center comes out clean.
Cool in pan and frost with icing.
For the icing:
Mix well the following:
1/2 cup softened butter, the cream cheese,and the confectioners sugar. Cool cake and then spread with the icing.
