Blueberry Cake
2/3 cup sugar
1 egg, beaten
1 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla
1 cup blueberries
Mix sugar with egg, beat well. Sift flour with baking powder and salt and add alternately with milk to the sugar-egg mixture. Stir in butter and vanilla. Fold in blueberries. Pour into greased 8-inch round or square pan. Sprinkle top of cake with sugar. Bake at 400 degrees for 25-30 minutes or until cake tester comes out clean.
