Cranberry Corn Pancakes
1 cup flour
2/3 cup cornmeal
1/3 cup rolled oats
2 tsp. baking powder
1/2 teaspoon baking soda
2 Tbsp. sugar
2 eggs
3/4 cup orange juice
1 cup milk
1/4 cup butter, melted
1 cup cranberries, chopped and tossed with 1/4 cup sugar
Combine dry ingredients. Blend eggs, orange juice, milk and butter in a blender. Add dry ingredients and blend until smooth. Stir cranberries into batter.
Cook on a hot, greased griddle. Serve with butter and maple syrup.
