Blueberry Sour Cream Pancakes
1 cup flour
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup sour cream
1/2 cup milk
1/2 tsp. vanilla
2 Tablespoons vegetable oil
3/4 cup fresh or unsweetened frozen blueberries
Stir together four, sugar, baking powder, baking soda, and salt. Beat egg with sour cream, milk and vanilla in a large bowl. Beat in oil, then add flour mixture. Stir just until combined.
Lightly butter a hot pancake griddle and pour about 1/4 cup of batter for each pancake. Top each pancake with several blueberries.
Cook pancakes on first side until bubbles appear and bottom is browned. Turn once and cook other side until browned.
Makes about 12 pancakes.
