Sweet Potato Rolls
1 cup mashed sweet potatoes
3 tbs. butter, melted
1 pkg. rapid rise yeast
1 1/4 cup warm water
1 egg
1 tsp salt
3 tbs. sugar
5 cups white flour
Blend potatoes with melted butter. Dissolve yeast in 1/2 cup warm water. Add yeast mixture, egg, salt, and sugar to potato mixture. Stir in ramaining water. Add flour and mix well until soft dough forms. Turn onto a well floured board & knead for 10 minutes. Place in a bowl coated with oil. Cover & allow to rise 1 hour in a warm place.
Divide dough into 24 pieces & form into rolls. Place on a greased baking sheet, cover and let rise in a warm place for 30 minutes or until doubled in size. Bake at 425 degrees F. for 15-20 minutes.
