Easy Lemon Bread
1 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
Grated rind of 1 lemon
2 eggs lightly beaten
1/4 cup butter, melted
1/4 cup milk
2 tablespoons fresh lemon juice
1/3 cup frozen lemonade concentrate, thawed
Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.
In a large bowl combine flour, sugar, baking powder and salt. In a separate bowl combine lemon rind, eggs, melted butter, milk, lemon juice and lemon concentrate mixing well. Add wet ingredients to dry ingredients and mix only until flour is moistened. Do not over mix.
Pour batter into a greased 9x5 loaf pan and bake at 350 degrees F. for 50 - 60 minutes or until cake tester comes out clean. Let cool in pan 5 minutes, then turn onto rack to cool completely.
