Cranberry Bread 2
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 cup sugar
2/3 cup orange juice
2 tsp. orange rind, grated
1 egg
3 Tbsp. vegetable oil
1/2 cup walnuts, chopped
1 1/2 cups raw cranberries, chopped
Sift together dry ingredients. Combine orange juice, rind, egg and oil.
Add all at once to dry mixture. Stir just enough to moisten. Add nuts and cranberries. Pour into greased 9x5 inch loaf pan. Bake at 350 degrees F. for 50 minutes or until cake tester comes out clean. Remove to rack to cool.
