Avocado Bread

2 cups flour
1/2 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
3/4 cup sugar
3/4 cup chopped pecans
1 medium, ripe, avocado
2 eggs
1/2 cup buttermilk

In a large bowl combine flour, baking soda, baking powder, salt, sugar and pecans. In separate bowl, mash avocado; add eggs and buttermilk and mix well. Add wet ingredients to dry ingredients and mix only until flour is moistened. Do not over mix.

Pour batter into a greased 9x5 loaf pan and bake at 350 degrees F. for 50 - 60 minutes or until cake tester comes out clean. Let cool in pan 5 minutes, then turn onto rack to cool completely.
